Step by step method

  • Step 1

    Place rice in strainer.

  • Step 2

    Rinse under cold water until water runs clear.

  • Step 3

    Drain well.

  • Step 4

    Bring broth and lime juice to simmer in medium saucepan.

  • Step 5

    Heat oil in large saucepan over medium heat.

  • Step 6

    Add garlic; sauté until golden and sticky, about 1 minute.

  • Step 7

    Add rice; stir 2 minutes.

  • Step 8

    Add hot broth mixture and 3/4 teaspoon salt and bring to boil.

  • Step 9

    Reduce heat to low; cover.

  • Step 10

    Cook until rice is tender, about 25 minutes.

  • Step 11

    Turn off heat; let stand, covered, 10 minutes.

  • Step 12

    Add herbs and lime peel to rice; fluff with fork.

  • Step 13

    Season with additional salt, if desired.
